Christopher Hoch
Christoph Hoch, a twelfth-generation vintner from Hollenburg, continues a legacy dating back to 1640 on the Danube's south side. In 2013, he ventured on his own, cultivating 12 biodynamic hectares, certified by Demeter. The unique Hollenburger conglomerate subsoil, rich in active limestone, akin to Champagne's Côte des Blancs, inspired his sparkling wine journey. Mustard imparts sulfur, reducing bottling additives, while rye enriches soil with carbon and humus. Partnered with phacelia, it yields nitrogen. Hoch pioneers composting and educates on biodynamics in Krems. His vineyards boast Grüner Veltliner, Riesling, Zweigelt, Weissburgunder, Blauer Portugesier, and Muskat Ottonel. Focusing on terroir expression, he employs traditional methods—spontaneous fermentation, wooden barrels, and distinct aging cellars. Hoch crafts non-vintage blends, showcasing Hollenburger's essence over single vintages. His innovative approach redefines Austrian wines, exemplifying courage and limitless potential.
