16% whole cluster; 5–8 day cold soak; indigenous-yeast fermentation using a modified pied de cuve; hand punch-downs twice daily; average 18-day cuvaison.

Organic and regenerative farming; dry farmed; no irrigation

Aging

18 months in French oak: 20% new, 30% one-to-two-year-old and 50% three-to-six-year-old barrels; one racking before assemblage; gravity bottled unfined and unfiltered.
