Prolijo Mezcal

Prolijo Mezcal is the name behind award-winning, beautifully handcrafted Oaxacan mezcal. Their primary goal: producing mezcal through traditional Zapotec production methods (dating back to 1897) while maintaining the utmost respect for the culture and traditions of Mexico. Before the product gets into bottle, the ripe agave is hand-harvested, roasted in floor ovens, undergoes the conversion into fibers via a Tahona, and then fermented in water in a wooden tub. Distillation occurs twice, in copper alembic stills. The resulting mezcal is rich and flavorful, with a variety of different expressions (such as Mezcal Blanco, Mezcal Reposado, and more).
